Baja Fish Taco Recipe

I really enjoy sharing recipes and so I am not always taking without giving I figured it was my turn to share. Here is a recipe we have tried and it is pretty good.

Baja Fish Tacos
We have used both Cod and Mahi Mahi and both worked fine. We even did chicken, but the fish usually tastes better if you can believe that:).

Sauce:
1/2 C. Sour cream
1/2 C. Mayo
1/4 C. chopped Cilantro
add 2 T seasoning mix from 1.25 pkg (we think the Taco Bell brand taco seasoning packet is the best).

Marinade:
1 lb white fish in 1" pieces
2 T Vegetable oil
2 T Lemon juice
combine with the rest of the seasoning

Cook 4-5 minutes until the fish flakes easily. Fill warmed taco shells with taco sauce, favorite toppings: shredded cabbage or lettuce, tomato, cheese etc. and then squeeze a few slices of fresh lime over the top. I hope you like it. I thought it would be nice to have some tasty ways to use fish. I think it is a nice change of pace.

I forgot to meniton that we usually just saute the fish in a frying pan and then we usally use the white corn tortillas either warmed in a skillet or deep fried. I think any type of tortilla would work fine.

Asia is a character in the book/movie “Hawaii” by I think James Mitchner and Leigh- My grandfather’s first name was Lee Roy and My dad’s middle name is Lee also.

WHEN WAS THE LAST TIME YOU CRIED?
I try to avoid it whenever possible. My babies get me a little teary eyed on occasion.

WHAT IS YOUR FAVORITE LUNCH MEAT?
Turkey and Ham-I usually eat them together.

DO YOU HAVE KIDS? Yes Kate-3 and Beck-1

IF YOU WERE ANOTHER PERSON WOULD YOU BE FRIENDS WITH YOU?
I think so, but lately I have been a major dumb blonde. I blame it on the hormones and lack of sleep.

DO YOU USE SARCASM A Lot?
Not usually, so when I do people don’t realize I am being sarcastic.

DO YOU STILL HAVE YOUR TONSILS? Tonsils-yes adnoids-no

WOULD YOU BUNGEE JUMP?
No never. I wouldn’t sky dive either. I have motion sickness really bad but my husband insists that I am just scared.

WHAT IS YOUR FAVORITE CEREAL?
“carmel delight” from Fiber one, frosted mini wheats, cracklin oat bran.

DO YOU UNTIE YOUR SHOES WHEN YOU TAKE THEM OFF?
Too lazy. I don’t iron either.

DO YOU THINK YOU ARE STRONG?
I use to think so until I had an independent 3 year old. I can’t imagine how I will handle her as a teenager.

WHAT IS YOUR FAVORITE ICE CREAM?
Chocolate with cholcolate fudge and chocolate covered nuts with chunks of chocolate in it.

WHAT IS THE FIRST THING YOU NOTICE ABOUT PEOPLE?
Their face (smile and eyes)

RED OR PINK?
I was anti pink until Kate who loves pink. I still prefer Red.

WHAT IS THE LEAST FAVORITE THING ABOUT YOURSELF?
I am very self-counscious which doesn’t help with my dumb blonde phase (at least I hope it isn’t permanent.) Stretch marks, cellulite, varicose veins- I see why some women want to wear burquas.

WHO DO YOU MISS THE MOST
Mission companions and friends who live out of state. Luckily most of my family is all close by.

My ugly around the house jeans and T-shirt with barefeet.

My husband, Babies, cookies or rolls baking in the oven, fruit or vanilla scented candles, ambrosia oil, scented lotion (pear, love spell, sweet pea, plumeria, & vanilla.

WHO WAS THE LAST PERSON YOU TALKED TO ON THE PHONE?
My husband

FAVORITE SPORTS TO WATCH?
I never thought I would enjoy watching sports, but I sometimes find myself getting into golf if Eli is watching.

HAIR COLOR?
It seems to be getting darker brown every year with more and more gray (so far I can get away with plucking them) According to Kate I have Bwack hair.

EYE COLOR?
Hazel-green and brown but I usually just say brown since no one really notices the green.

DO YOU WEAR CONTACTS?
For several years now and probably for the rest of my life. I am worried I might be too closterphobic and anxioius to do lasik.

FAVORITE FOOD?
Chocolate, cheesecake and chocolate cheesecake, fruit, ice cream. I love to eat and will eat just about anything you put in front of me. No wonder I am self-conscious about cellulite.

SCARY MOVIES OR HAPPY ENDINGS?
I usually won’t watch a scary movie unless I have been tricked or begged into to watching them.
LAST MOVIE YOU WATCHED?
At the movies "Horton Hears a Who" on DVD I started watching "Across the Universe but never finished it"

WHAT COLOR SHIRT ARE YOU WEARING? Yellow

SUMMER OR WINTER? Summer.

HUGS OR KISSES? Hugs mostly and kisses from my kids.

WHAT BOOK(S) ARE YOU READING NOW?
I usually re read self help books that I want to use in my life but lately I only get about ½ way through them.

WHAT IS ON YOUR MOUSE PAD? A Free one that is a 2005 calendar.

WHAT DID YOU WATCH ON TV LAST NIGHT?
I usually just watch little glimpses here and there before I have to go do something else. I caught a little bit of studio 5 today. I will watch the office, House and Lost with my husband. We also like to watch cooking shows together.

my kids laughs. Nature sounds wind, rain, rivers, oceans, etc.

Beck is walking!

Beck is finally walking on his own. He still needs lots of practice to get more balance, so he doesn't fall so much. He gets so excited that he almost starts running before he is even very stable onhis feet. He will be better once he learns to stabilize himself before taking off. At least he is now willing to try it on his own. It is pretty cute how he holds his hands above his head to help with balance. A couple of times he would wave his arms above his head back and forth a bit and he reminded me of a little chimp or ape baby.

WOW! Jimmy is 15!



Happy Birthday Jimmy! We hope you have a fun birthday. We miss you when we don't see you and are glad when we get to hang out with you. You are a funny, smart, nice, mature young man who has so much going for him. We are proud of the man you are becoming. Have a great birthday!

Top Ten. . . Kateisms

Having a three year old can be challenging sometimes. Kate is often bouncing off the walls and doesn't seem to hear a word I say. I end up repeating myself 20 times before she finally gets it. It is a good thing they bring plenty of humor into your life to go along with the frustrating moments. Here are some of the funny things Kate has said.

10. I pointed out the U on the mountian for Uinta and we drove by it later on and Kate said "Look mom there is a me on the mountain" our reply was no it is a U and she would say "yeah there is a me on the mountain"

9. One of her first prayers by herself "Please bless that I can get a band-aid for my owie and that Beck can learn to walk like me"

8. At Christmas time instead of playing house she would play "Mary and Joseph"

7. Kate didn't like walking in a parking lot that had dirty slushy snow becasue she thought she was going to step in all the dog poop.

6. I think it is cute when she can't say the whole word so she shortens it like "Mingo" (flamingo), "scera" (masquera), "lene" (trampolene).

5. I also think it is cute when she makes up her own words for things like "ah-ah" (chapstick) and hopie gopie" (terykaki sauce)

4. A couple of days ago I mentioned that I had a headache and she asked "Is it because of daddy?"

3.One time I pointed out a crane at a constructions site and then as we drove by again and the crane wasn't there she said "look mom there's no more kangaroo".

2. "A penny is a money diamond"

and the number one Kateism which was just this morning as I was getting in the shower is.......
1. "mom you are all wiggly wobbly" (Ihad misquoted her as saying "jiggly wiggly")

The truth hurts even from the mouth of babes. I felt awful and yet I cdouldn't help laughing. It is was no surprise to me, I know I am very out of shape. Maybe this will be what I need to finally start exercising.

Beck is learning to talk quite well also and I can't wait to hear some of the funny things he comes up with. He now can say "nack" for snack and says "milk" along with his other words "book, ball, momma, daddy, bye-bye". I know he says a lot more but it is just not clear enough yet for me to pick up on. When he gets frustrated becasue he can't get my attention he will yell "MOMMA". It is pretty funny.

Welcome Isla Ann Halfacre!










Congratulations to Kristy and Blake who welcomed their brand new daughter Isla Ann on Sunday April 6th. She weighed 6lbs. 10 oz. and was 20 inches long. She is beautiful! I am glad that everything went well for Kristy and Isla. The twins seem facinated with their new little sister.

Thoughts on Conference

I was really looking forward to conference this weekend as I usually am and I was wondering how strange it might be to not have President Hinckley there conducting and speaking. I really enjoyed the spirit that I felt during the solemn assembely and the special attention to detail and order in the way they conducted the sustainings. I was also very touched by the countenance of our new prophet President Thomas S. Monson. As I looked at him, I could tell he was feeling the weight of his calling or the burden of the mantel of the leadership of the church. I could see he was not his jovial light-hearted self and that he was full of emotion of the proceedings of the solemn assembly.

Unfortunately, with my small children needing my attention most of the rest of the time, I really didn't get much out of the Saturday sessions. It seems like I don't ever get a break or personal time. I can't even go to the bathroom or take a shower without interruption from my 3yr old or 1yr old.

As we were trying to listen to the Saturday afternoon session in the car, the speaker was talking about the Holy Ghost and Kate said something really funny. Unfortunately, I don't remember all of what she said but part of it was "the Holy Ghost won't eat me".

I was pretty disappointed about not getting what I needed out of conference, but still looking forward to the Sunday sessions for the opportunity to hear the one thing that seemed to be directed to me or the one thing that I really needed to hear.

I hate to admit it, but there was contention in our house late Saturday afternoon and I was feeling awful that evening. It was one of those self-pitty parties where you're feeling fat, ugly, stupid, inadequate and a failure as a wife and mother. Now I desperately needed a spiritual pick me up from conference even more than ever.

Sunday moring I tried hard to get my kids ready (fed and dressed) before conference started as well as myself. I was a little frustrated that I was having to multi-task during conference, but I also wanted to go visit my brand new niece Isla Ann (pictures soon to come) and my sister Kristy at the hospital inbetween the conference sessions. Then Beck became really fussy and needed me to put him down for a nap. Again, I was disappointed since I only got to hear little bits and pieces of the morning session, but still hopefull that I had one more chance.

Kate fell asleep on our way home from the hospital, and I was getting my hopes up that I would finally be able to watch conference in peace and quiet with two babies fast asleep. Beck had other plans and cried and fussed for over an hour before finally falling asleep just in time for me to listen to Elder M. Russell Ballard and president Monson concluding comments.

It was finally what I had been hoping for and started to doubt I could receive. I needed to hear that instead of being in a hurry to get the next thing done that I should focus on living in the moments. I also needed to hear permission and encouragement from church leaders to find time for myself to cultivate interests and enrich my life. I needed to be encouraged to pay more attention to prayer, study of the gospel, and teaching the gospel to my children. I definitely feel like I need the encouragement, help and appreciation of my husband. I really liked the advice he gave to husbands about asking your wife what each child needs and how they can help and the giving your wife a day away comment:). I don't see how women do it with out a husband to support them in their role as mothers. I know I couldn't do it with out Eli.

I loved President Monson's talk as well about his wife and how supportive she is. I have nothing to complain about when Eli needs to travel for work for two weeks at a time considering how much the general authorities have to be away from their wives (sometimes up to five weeks at a time or like our president Monson's relative who left on a mission two weeks after their marriage).

Lastly, I was very moved by President Monson's plea to pray for him as he prays for us. I was impressed by his humility and his expression of love through his prayers on our behalf as members of the church. I look forward to reading the words of all those who spoke in conference that I did not have the chance to hear this weekend.

Fun Friday!

Kate has been asking us all week if we could go fly the kite that her aunt Emma gave her. We have been busy trying to complete our refi, appraisal, and bids for home repairs that we didn't get to do it until Friday night. She loved it for about 2 minutes and then she wanted to go to the playground. she kept taking off with out Daddy and we kept having to call her back to wait for us. It was pretty cold, so I stayed in the car with Beck.



Beck has quite the sweet tooth and when ever anyone has a treat he wants he holds out his hand and asks for some-it is pretty cute. He gets pretty mad if he doesn't get his sugar fix. I think he gets that from me.

Before I had a son, everyone told me that boys weren't as affectionate as girls. I was pretty surprised when Beck turned out to be so affectionate. He loves to give kisses and they are usually pretty slobbery ones too.











Kate went to a birthday Party on Friday and it was a tea party theme. After their tea party they dressed up and put make-up on each other. Kate had a lot of fun especially with all the older girls doting over her.
